Vegetable spices

 

These are based on firm vegetables such as tubers or carrots, which are finely grated and then dry roasted at medium heat.

 

Our favorites are:

 

| Intense roasted cauliflower spice

  with aniseed

| Pumpkin-carrot spice

  with roasted bread, paprika & cayenne pepper

| Blackened celery

  with roasted celery seed and coarse salt

| Vegetable espresso

  A concoction of Jerusalem artichokes, parsley

  root and cauliflower "extracted" under high

  pressure
